Technical. Refers to the protein in red blood cells that carries oxygen, not the entire substance of blood itself. Only interchangeable in highly specific scientific discussions. 'Hemoglobin levels' but not 'human hemoglobin'.

Informal/graphic. Refers to shed blood, especially from violence or injury, often with a sense of disgust or horror. 'There was gore all over the crime scene' works, but 'My blood type is O positive' is not 'My gore type is O positive'.
