General. A broader term for any blood vessel carrying blood away from the heart. While all carotids are arteries, not all arteries are carotids. 'The doctor checked his pulse in the arteries' is correct, but 'The doctor checked his pulse in the carotids' is more specific and implies a particular location.

Very general. Refers to any tube-like structure for carrying fluid, including blood vessels (arteries, veins, capillaries) and lymph vessels. Too general to be truly interchangeable with 'carotids' in a medical context, unless the context makes it clear it refers to arteries.
