Everyday. Direct synonym, 'map' is far more common for the act of creating a map. 'Cartograph' is more formal and specific to the science/art of cartography. 'We mapped the area' is common, 'We cartographed the area' is less common.

Everyday. 'Map' is the general term. 'Cartograph' implies a map created through scientific or technical cartographic processes, often more detailed or specialized. 'This is a good map' is common, 'This is a good cartograph' is very technical and rare.
